When you’ve been eating variations of: almond butter, broccoli, sweet potato, chicken thighs and meatballs for 2 weeks in a row things can get a bit stale and uninspiring. Sometimes all you need is to have some friends come over and say “well have you tried this?…”
Pete and Vonny came over for dinner and Vonny shared a rad recipe for pumpkin muffins that she used last time she was on the Whole30. I’ve been looking for something to consume post WOD (because I can’t have my Progenex for the next 17 days) and these turned out to be just the thing I was looking for…
Ingredients
- 1½ cups almond flour
- 3/4 cup canned pumpkin (or cook and puree pumpkin yourself)
- 3 large eggs
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp ground cinnamon
- 1½ tsp pumpkin pie spice
- 1/8 tsp sea salt
- 1/4 cup raw honey (optional) – I didn’t want to use the honey because it’s not Whole30 compliant but I did want [sweet] muffins so I add 4 dates and 1 banana (to be honest though –
Instructions
- Preheat oven to 180 degrees (c)
- Coat muffin tins with coconut oil (or use paper muffin cups and add 1/2 tsp melted coconut oil to batter).
- Mix all ingredients and pour evenly into tins.

7:30am – wake – super restful sleep although my chin (missing a beard woke up mighty cold) Last night I wore a beanie to bed and pulled it down over my eyes for a complete blackout -> worked a treat and kept my head warm too.
8am – coffee – double shot espresso
8.15am – breakfast – bacon + 4 egg scramble (w truffle oil) + wilted spinach + sautéed mushies + 1/2 avocado
9am – coffee – double shot espresso
11:15am – pale ball (Prue’s) + double shot espresso
12pm – mince and sweet potato mix + almond butter
4pm – Sunday arvo training – some recovery work:

6:30pm – dinner – sweet potato and baby spinach salad w/ roast garlic and onion + steak + coconut milk and egg custard w/ strawberries
8pm – tester: post WOD muffin
10pm – in bed.
